Pumpkin Pie! Lovely Fall Treat - Probably Healthy Too


This recipe is NOT one of the eight original recipes in the latest novel "Not Now, Katrin" by the way ;o) You also probably have a huge pumpkin leftover from Halloween. Thanksgiving is coming up soon, so I cut Jack up and made a nice test pie. Delicious!!

Ingredients:

Pie crust - you can make a pate sablee, or like I did cookie/bread crumbs with butter. I leave this to you.
500 g Pumpkin
150 g brown sugar
250 ml whipping cream
Pumpkin pie spice, or gingerbread spice - cinnamon, cloves, mace, nutmeg, ginger - to taste!
Vanilla essence, just a tad
3 eggs

Method:

I boil the cut up pumpkin pieces (without peel) then simmer until soft - with a good splash of rum!
Drain the pumpkin, add the sugar and spices, and the whipping cream and puree.
When cool, add the eggs and whisk together well.

Bake 15 min at 200, then another 45 min at 175 celcius

Let cool. Serve with whipped cream! Totally yum.
